I began cold smoking trout as a hobby, in a metal dustbin in the back garden almost thirty years ago. Word spread and I began smoking fish for local fishermen to help make the most of their catches. Since then I’ve gradually increased production, improved techniques and expanded the range of ingredients so my team and I now produce cold and hot smoked fish and meats for the anyfish fishmonger's and for a collection of local trade customers who use our smoked salmon and poultry in their shops and cafés. The anyfish smokehouse is based in a converted barn near Bishops Waltham. It's a definitive cottage industry, assisted by the DEFRA Rural Enterprise Scheme which supports sustainable, enterprising projects with potential to boost the local rural economy.
Cold smoking is a gentle drying and preserving process which gives the product a rich flavour and enhanced texture. Hot smoking is more like a traditional cooking process - not dissimilar to roasting. Contrary to some people’s beliefs, it doesn’t mean the product is spicy hot, rather cooked in hot smoke which gives it a delicious smoky flavour and moist texture.
